Refrigerator Grape Jelly with Liquid Sweetener

  • 2 packages or 2 tbsp unflavored gelatin powder
  • 1 bottle (24 oz.) unsweetened grape juice
  • 2 tbsp bottled lemon juice
  • 2 tbsp liquid sweetener

Yield: 3 half-pint jars

Please read Using Pressure Canners and Using Boiling Water Canners before beginning. If this is your first time canning, it is recommended that you read Principles of Home Canning.

Procedure: Sterilize canning jars and prepare two-piece canning lids according to manufacturer's directions.

In a saucepan, soften the gelatin in the grape and lemon juices. Bring to a rolling boil, dissolving gelatin; boil 1 minute. Remove from heat. Stir in liquid sweetener. Pour into hot sterilized jars. Seal, cool and store in refrigerator.

(Note: 1 tablespoon = 11 calories)
